I think I really started to notice it after I read one of the last chapters in McGee's On Food and Cooking. Apparently the US as a society has been addicted to the quick fix for well over a hundred years, food and diet fads being no exception. I take it as permission to pay a lot less attention to the lastest study about blah blah. The pattern for the next big save-the-world food gets a little old after a while.
