Fix Me A Snack

Comfort food, stabs at healthy livin', and an experimental snack lab all rolled into one

1/2 cup unsalted non-homogenized nut butter (such as almond or peanut)
1/4 cup chocolate sauce or chocolate syrup
4 teaspoons ground flaxseed
4 teaspoons wheat germ
1/2 cup brown rice crispy cereal
1/3 cup unsweetened shredded coconut

In a medium mixing bowl stir together the nut butter, chocolate sauce, flaxseed, and wheat germ with a rubber spatula. Add the cereal and stir until combined. It’s perfectly fine if some of the cereal is crushed during stirring.

With your hands, roll the nut butter mixture into balls. Spread the coconut on a small plate and roll the balls in it to coat. Serve with a tall glass of milk. Store in an airtight container in the refrigerator.

Yield: 20 balls
