I used Tuscan Kale. But maybe I should try some of the curly kind. I saw some dark purple curly kale the other day that was quite beautiful.

I actually love kale chips. I don't put the vinegar on them and I roast them until they're so crispy that they just melt in your mouth. But I like seaweed, and they taste just like seaweed (without the fishiness) when I do it this way. What kind of kale is this? I only use the curly kind but this looks like the thicker, broader leaf.

I can not tell you how much I love the fact that some of the "healthy" eaters out there loathe kale as much as I do. Back in the day when we had a co-op membership, we also were buried under a pile of kale. I ended up making some casseroles with lots of cheese and rice that completely masked the kale. But recently I came across How I Learned to Love Kale by Molly Wizenberg. The recipe in this article makes kale my friend and not my enemy.

i have never done this with kale. when i was getting co-op veggies we got kale nearly every week and it the whole family's least favorite. i tried it many ways, the most palatable being boiled then sauted with one diced onion. it was the chewiness that always made me not love it. i might try this, although i usually opt for spinach when buying greens now that i choose at the market.

Since my blog is called Lettuce Eat Kale, it's safe to assume I'm a tad obsessed with these snacks, both the roasted and dehydrated kind.

Never cooked 'em with vinegar, so will have to give that a try & here's a tip I learned from Jaden at Steamy Kitchen which is worth trying: Add the salt after roasting. Seems to help with the all-important crisp factor. Give it a go and see what you think.

I am not a fan of kale, but I AM oddly drawn to try these kale chips! Your post is not the first that I've read about kale chips. One day I will give these a try!

This is the recipe I tried recently. I do not think these were a success for me but I vow to try them again one day. I did not use the vinegar. Also I might try and lower the oven temp because heating EV olive oil too high can be bad for you. Mine seemed to be too brown and burt oil tasting. Glad to see you took the plunge and ate some Kale :)
